Sorry Sherry, I thought I'd updated, obviously not!
George is back to eating different stuff, but is still not keen on the chicken wings chopped up with the bone in. He seems to just hide those.
Es ate some tiny bits of pork the other day (Woohoo!) but is still only eating soup when on the spoon or finger. I haven't had a day off yet so I haven't been able to try what you said, but will be doing that this weekend.

Are you going to be able to try George with nothing but the wings for a few days? If so start with chopping the bejeepers out of them. Do that for a few days every meal. From there just chop less and less.

Yep that's fine. I'll start that tomorrow. He's got some for his evening meal today too.

George is eating some of the chicken wings, but mostly hiding it in his litter tray. On the upside I caught Es stealing and eating a piece of the wing yesterday! She wouldn't eat any more though.

It's a start! Keep going with them. They might also benefit from a feeding den. It can be as simple as a cardboard box they can get in, with a hole cut into it. Here are some examples, from very simple to very complex for large numbers of ferrets: holisticferret60.proboards.com/thread/4544/feeding-den-setups

Yeah I've put one like that in their cage. They do use it sometimes but George's preferences seem to change depending on what day it is!

Here's my weekly update
1. Ferret's name:Esmerelda
2. Ferret's weight:0.8Kg
3. Still the same with Es, I feel like we're a bit stuck other than the cheeky bit of pork she ate, she'll eat a bit of the soup on her own, but mostly waits to be spoon fed. We're still giving her biscuits at night.
4. Standard kibble poos at the moment.
5. Activity levels:High.
6. Weekly menu:Raw soup during the day and then kibble at night. Trying her with slivers of meat every now and then just in case! 1 quails egg this week.
1. Ferret's name: George
2. Ferret's weight:1.3Kg
3. George has eaten 2oz amount on average per meal, though he is hiding some in his cage but most is getting eaten.
4. Small and dark poos 5. Activity levels: Calmed down a bit, but still energetic. 6. Weekly menu (George gets 2 meals a day of about 2oz each meal and I've also got him on quite big chunks):
Monday: Chicken wings chopped up- would only eat a few hand fed bits. Tuesday: Pork, chicken gizzards and chicken heart. Wednesday: am: Ox kidney (Most left) Quails egg Thursday: Chicken wings (Not much eaten) Friday: Chicken wings (Not much eaten) Saturday: Chicken wings (Not much eaten) Sunday: Chicken wings (Not much eaten)
Still working on them both. Struggling to find time to hand feed Es in the morning as she licks a bit and then runs off and comes back. If we hold her she wriggle until we let her go. Then if we leave her with the soup she just ignores it!

Okay, time to wean Esmerelda away from hand feeding . She is most definitely playing you! Sit on the floor with her, start with the spoon and lower it to the plate and slide it out of the way. Let her lick from the plate as long as she will. When she stops eating, do the trick with the spoon again, but lower it as she is licking and slide it away so she licks from the dish. Each time you have to start her with the spoon start her closer to the plate until she is licking from the spoon sitting in the dish without it being raised at all. It should be a short time from that to having the spoon there while she starts from the dish to being able to remove it entirely. You might still have to "prime" her with it in her cage(or where ever you ultimately want her eating). You can also do this whole thing with her in the cage instead of on the floor as well if she is going to eat there. With George chop the wings up even more.

George is starting to eat more of the chicken wings as long as they are chopped up small. Still not all of them, but it's all we've been giving him so he gets hungry and has some.
Es is the same, keep sneaking slivers every now and again in case she'll eat them!

So on closer inspection now I'm off work it looks like george is leaving most of the bones, but I have heard him crunching as he's eating so he must be ingesting some! How long should i keep giving him only chopped up chicken wings for?
Esmerelda ate some chicken meat off me this morning. Only a few small slivers, but still good!

Can you get an estimate as to how much he is actually consuming? Try weighing the food before you feed him, and then weigh the left overs before you put the next in.
