From what you wrote in your menu it's looks good. The problem is in what is where. How many of those bone in meals are chicken wings or necks, how many are whole prey, etc? What we need is something like: Mon: Rat/chicken wing Tues: Mouse/beef chunks

This varies kinda week to week in regards to the bone-in meat. Sometimes we won't have turkey neck, sometimes they will be alternated differently, it honestly depends. The menu is always organized like this by meal type, but the actual type of meat will often be different. For example, this is just this week's menu. So like I said, same outline, different meats. And as he gets more meats in his diet I'll edit and update the lower part of what alternatives there are.
Mon AM: edible bone-in meat (2oz chicken wing) Mon PM: edible bone-in meat (2oz turkey neck)
Tues AM: edible bone-in meat (2oz chicken wing) Tues PM: heart (2oz pork heart)
Wed AM: edible bone-in meat (2oz turkey neck) Wed PM: organ meal (1oz chicken liver/1oz pork kidney)
Thur AM: edible bone-in meat (2oz chicken wing) Thur PM: muscle meat (2oz beef chunks)
Fri AM: edible bone-in meat (2oz turkey neck) Fri PM: mixed meal (0.5oz chicken liver/0.5oz pork kidney and 1oz heart)
Sat AM: edible bone-in meat (2oz chicken wing) Sat PM: muscle meat (2oz goat chunks)
Sun AM: edible bone-in meat (2oz turkey neck) Sun PM: muscle meat (2oz pork chunks) (^egg day^)
Treats Freeze-dried turkey liver, olive oil.
Alternatives Bone-in Meat: Quail, chicken wing, turkey neck, cornish game hen (plan on starting him on this soon).
Muscle Meat: Goat chunks (with skin), pork loin chunks, stew beef, chicken gizzard (rarely because he eats a lot of chicken anyway),
Heart (MM): Pork heart
Organs: Pork kidney, chicken liver.

Monday: Beef chunks and turkey wings Tuesday: Whole pigeon Wednesday: Whole chicks and mice Thursday: Whole rabbit Friday: Pet mince (organs and off cuts from the butcher) Saturday (the fish day): Whole pilchards and raw makerel Sunday: Whole pheasant
They all have thick, plush coats, I've also noticed that this diet is very good for they're teeth, when I got Vinnie last April, he had very yellow teeth and he had a green bit on one of his back teeth, now they're all clean and white.

Mine also eat a mix of frankenprey and whole prey. They don't have the same menu every week, but I keep tracks on weekly basis, that they get 7 meals of bones in meat, 4 meat, 1,5 organs and at least 1,5 heart. If I add whole meal (rats or mices), I adjust the menue (I put a bit less liver and more heart in the organ mix and depending on their poop might adjust bone in meat/meat meals ratio.
Here is one weekly example of the menue of the trio (Gusztav, Drdra, Iorek), other two are at the moment on special menue - Chili on rabbit only (IBD) and Vega on mostly mixed food because of his broken teeth (his menue looks similar to that of the trio, he is - for now on - a bit smaller amount of organs, since he is just getting used to the raw food and he hates organs, and no whole prey yet for him): monday morning: whole rats monday evening: organ mix + heart (liver, spleen, testicles, kidney, heart) - swine, beef
tuesday morning: chicken backs (bones in meat) tuesday evening: beef lungs (meat)
wednesday morning: rabbit heads (I count them as whole, since they eat everything - bones, muscles, eyes, tongue, brain) wednesday evening: organ mix (liver, kidney, spleen) - horse (premixed - comercial)
thursday morning: chicken backs (bones in meat) thursday evening: chicken backs (bones in meat)
friday morning: rabbit chunks (meat) friday evening: swine heart
saturday morning: rabbit (bones in meat) saturday evening: rabbit (bones in meat) - one got an extra heart
sunday morning: swine & beef chunks (meat) sunday evening: chicken backs (bones in meat)
Beside this they ocasionaly get duck and as I said - mice, we had one day old chick, but are at the moment out of stock (when I have them, I feed one chick/ferret/week). They get one chicken egg per week, sometimes quail eggs and sometimes salmon oil. And btw, rats and mice are adult ones.

I just don´t see any other way to feed them Monday: AM - Chiken wings and necks (1 wing and 2 necks per ferret ) PM - Duck hearts Tuesday: AM - chicken craw (3-4 per ferret depends on the size) + pea size pice virgin coconut oil each PM - Whole 1 day old chicks (3 per ferret) Wednesday: AM - 1 duck + 1 rabbit liver + 2 ts crushed eggshells per ferret PM - minced venis+pork meat ca´300 g Thursday: AM - 1 rabbit head per ferret (axed into halves) PM - beef muscle chunks Friday: AM - 3-4 chicken craw per ferret depends on the size + pea size pice virgin coconut oil each PM - 1 chicken thigh with bone in it per ferret breaded in crushed eggsehell powder SaturdayAM - 1 1/2 whole pig heart (big chunks to all of them) PM - 1-2 duck liver per ferret depends on the size Sunday: AM - whole rabbit kits 2 per ferret PM - whole chicks 3 per ferret Sometimes we get some meats from hunters and then that week they have lot of game meats and bones to eat and chew. They do not take fish thou. I bought now crushed freezed salmon with bones and will see if they eat this or not but they will puke to fish oil so I do not give them that and instead of fish oil I give them 2x a week pea size pice virgin coconut oil. Smokey have got raw since when she was 2 months old and other ladies when they came to me, they were on kibbles before as I did not had any kibbles in home they went cold turkey from kibbles to raw, but they were so hungry and ate all I gave and they ganed weight very well. Hope it is enough as I have not made them any organ soups, they eat them whole I do not cut basically anything, olny axe the heads and cut a big chunks from pigs hearts. Tried to give them pig kidneys too, but they eat that very poorly, just don´t like it. I will mix it with eggs next time as they love eggs, I give eggs only 1x per week and one week chicken, then duck then quail and turkey when they are awaliable. Larger eggs they will get 1 each, guail they will get 2 each.

I've ditched the ad lib kibble that mine were on as they just stopped eating it and are storing small amounts of their raw or whole prey for in between meals instead

I get my coconut oil from organic farmers health store. I'll have to look in the farm shop down the road and if there is some, I'll get some and if there isn't then I'll be off on an online search for it
