The Grocery markets here are very Typical, everything very commercial. Even the Old time Butchers are getting the chickens from Tyson. Most ALL the rabbit or quail I could order is in some kind of Marinade.
So I took a 2 hour trip to much bigger town with real malls and stores. I Google 2 Asian Markets, find and got to both. Only 1 had a some frozen whole Duck that was expensive and who knows how old. They had some 6 packs of quail only in a broth. I DID buy those. I love the size of the quail! But all in all the only stuff I seem to have available to me in my Markets is : Chicken gizzard, livers. Calf liver, beef liver. Hog Maw, pig tails and feet, chicken wings, Lamb shoulder or ribs.
I will be ordering a LOT on line. Only good news I have found a guy they will prepare quail and rabbit for me (gutting them). He sells the quail and I can buy the rabbits from a local lady.
I am a little concerned about 1 thing on the rabbit. I read that Rabbit fever actually comes from the rabbit being bitten by a infected mosquito. Im in the south so the Mosquito here are like state birds in a flock! How safe is buying a live rabbit from a person who breeds them for pets (knows the ones I get are food), and getting them semi processed, freezing for say 3-6 weeks, THEN feeding??

You can get liver so that's good. Just need to get a second organ. For tularemia in rabbits you really need to have the liver for each rabbit checked to see if it's been infected. If it has, toss the rabbit. The liver would have white spots.

Yeah...so I don't think I will trust that task to some Good Ol boy Sooo Rabbit also will have to come Hare today!

yes I am actually thinking I will buy a how to for dummies book on cleaning fresh game. I'm not thrilled about it, BUT I know it would save me to learn
