If they meat Ferrets are being fed has strings of what I'm assuming is fat, then would that be why their poop has some mucousy looking strings in it?

I can't remember how long your ferrets have been on raw, but it does take their bodies a while to "learn" how to properly digest everything. The white bits there are definitely fat, and it's possible there is some fur going through with it.

She has been grooming herself a lot. She has been on raw for about a month...

Try adding a bit of pumpkin in with her meals if you aren't. Total of 1/2 tsp a day.
