Binx is a lovely wee fuzzle.
As for switching from FDR to raw, you may find it a wee bit easier starting off with a milder meat like chicken, so mixing with ground chicken instead. Beef is a bit on the stronger side of smell and taste and it takes some fuzzies more work to get used to that one than others at first.

I'll pick up some ground chicken~ Or maybe ground turkey. I've got some non ground chicken but most of it is parted out into doggy meals for my raw fed dog.

Turkey should be alright too, pork is another mild meat, when I got Ares and Apollo their first switch meal was pork slivers, LOL. But they were 7 month old kits, so there wasn't too much fuss in switching and I got them switched right away. Older ferrets are a bit more stubborn and take more convincing than the kits.

Binx is very young haha. I think petco gets them in at bout 7 weeks. What color morph would be considered? Here's a better pic I"m thinking he's just a sable, right? Or would he be considered champagne?

Some of the pics make it seem a bit lighter and into the champagne territory, but some of them look darker than my Champagne, Loki, so I'd have said maybe a Chocolate/Light Chocolate, but those don't generally have red eyes I believe, so he's probably a dark champagne. Sherry or Heather might be able to better say later if they comment on here.
