Which of their products are we comparing here right now? I'm going to assume you mean the Orijen kibble vs the Ziwipeak Air-Dried food.
So Orijen is a good high-end kibble, but it's still a kibble, so you need to brush your ferret's teeth for them, kibble doesn't give ferrets the hydration they need from their food and in the long run, even high-end kibbles can contribute to insulinoma.
The Ziwipeak is apparently a mostly all-meat product, with about 5% other ingredients, which makes it look pretty good, but my biggest concern with it is the chicory inulin, which is a form of sugar, and I've heard said that could contribute to insulinoma, and lower blood glucose levels which can very badly affect a ferret that already has insulinoma. And again, it's a dry food, so your ferret isn't getting as much hydration as they should, and you need to brush their teeth for them.
Personally, I also always like to email the companies directly and try to get an idea of their nutritional balance in their product, for example; sometimes even if the product lists hearts in the ingredients, it might now have enough for a sufficient taurine level, or sometimes it'll have way too much liver in the product. This is especially important if you plan on doing a canine product versus a feline product for whichever reasons.

Feeding raw is always better, it's the species appropriate diet for them.

Inulin is a risk of lowering blood glucose, so if you already have a ferret with insulinoma, or have one that is borderline it would be a concern(IMO). I don't often say this, but if you can't do raw, I would do the Origen.
