I don't have a lot of experience in the matter but I'll try and help as much as I can
Traveling without
1)You should definitely keep her on raw if that is what she is used to, a quick dramatic switch would not be good and once you get a ferret on raw you should keep her on it. I feel that for most people even those who don't get raw if you put every meal in a container with writing on it like "feed this first day in the am" and messages like that most people wouldn't have a problem. If you explain well and label everything it should be good.
2) This is a bit trickier as you want to find the best so finding a good pet sitter who knows what to do and you trust can be hard, I'd suggest looking on facebook to see if someone is your area has a pet sitting service or even if someone near you has ferrets. Going to your vet is also a good idea as many vet clinics have cards or posters that advertise pet sitting, some places may even let you put something up saying you'd like a ferret sitter. Once you find someone though be careful ask questions, meet them, meet their pets, check their house if you can just check everything out if anything at all seems fishy don't do it. just trust your gut!
3) Again this depends on the sitter and the space they have, but even if she gets a little less playtime for a week she will be ok.

However there is a whole thread on traveling with ferrets that could also give you lots of information, @demigod recently had a long travel with two ferrets so he might have some more information as well.
