how long do chunks of liver, heart, and chicken thigh last in the cage?

It depends on the size, but usually chunks are fine for at least 12 hours, sometimes up to 24 hours for larger chunks. Whole prey can be left a couple days (depending on the size). After that depending on the climate (temperature/humidity) the meat might start drying out or spoiling. Ferrets love to stash meat and let is turn into jerky and consider it quite a delicacy!
One thing to note is that ferrets have very good senses of smell and are able to tell if meat has gone "off". You don't need to worry about them getting sick because if the meat has spoiled they will not eat it.
