I'm pretty sure that I've got liver on the left and a stump of the heart above. What are the two little square things? Can I feed them? I thought they were kidneys but now I don't know.

I second @poncesmom on the gizzards. Here's a picture I took after buying a pack last week:
They are very tough and rubbery, and a great teeth-cleaning tool for ferrets who aren't yet on bone (or even who are). They also help build up jaw strength which is important for ferrets transitioning to raw. They are incredibly high in protein and count as a "muscle" rather than "organ". You can cut them in strips the size & shape of a small slug (or bigger if Piper will eat it).
Oh, and one more thing: do NOT put them in your blender. Your blender will not be impressed.

Thank you both! Yes @poncesmom, I was at a wholesale store when I saw whole packaged duck. I was so excited, and so far, we've put it to great use. I've already rendered the fat and broke the carcass down. Although there was no little bag inside- I just found the organs floating around in the cavity. Oooh Celene thank you for the tips! I'm so glad you said that; all I have is a little magic bullet, and it's not exactly a vitamix! She's been eating a lot of pork recently for her muscle meals, so maybe they would be a nice change of pace.

I bought a container of rendered duck fat and it was about $9 for a margarine size tub. I use a magic bullet also. Those are great for making organ soup. Gizzards are a muscle meat and will definitely kill a blender, magic bullet or food processor. Until yours will eat them whole, slice them into long slivers.
