I've read that young prey items aren't developed enough to be considered a whole meal. So I was wondering at what age are different prey items considered old enough to not just be a snack? Chicken? Rats? Quail?

Generally breeding age. Just look it up for what that age is for each species.

How would I go about feeding chicken? It looks like the breeding age is 4-5 months. The chicken I'm able to get after breeding age would weigh 2.5-5lbs, enough to feed my one ferret for like 16 days provided he eats 2-5oz/day.

Not quite sure what you mean? Chop it up and separate into daily amounts. Freeze what you aren't using right away. Generally whole prey are smaller species like quail, mice, rats, guinea pigs, etc. Whole prey model chicken is more mess than it is worth. Just use chicken from the grocery store.
