So I haven't had any luck with getting organ variety locally in the ethnic stores So I'm going to place an order with Hare Today in the next couple weeks. I calculated that, if all 3 of my girls ate about 4 oz a day (which is a bit of an overestimation) I'd need about 1 lb of liver a month, half a lb of kidney, and half a lb of lung. I figure I'll need about 1.5 - 2 lbs of heart meat a month. So this is what I was planning on 1 x Chicken Hearts, 2 lbs 2 x Beef Kidney, 2 lb 1 x Beef Liver, 2 lbs 2 x Beef Lung, 2 lbs 1 x Beef Heart, 5 lb 1 x Turkey Hearts, 2 lbs 1 x Turkey Livers, 2 lbs 1 x Pork Livers, 2 lbs 1 x Pork Hearts, 5 lbs 1 x Whole Duck That's 14 lbs of heart = 7-9 months to use 8 lbs of liver (I get 2 lbs chicken liver locally) = 8 months to use 8 lbs kidney/lung = 8 months to use I should be getting a freezer soon, so space isn't really an issue. I am weary about keeping meat so long in the freezer. What do you guys think? I also want to try duck - are the bones more similar to turkey or chicken? My kids can handle whole chicken wings, but the turkey wings are SO big.

I've never kept meat in the freezer that long, so I can't really offer advice on that... but I can say that duck bones and chicken bones are very similar. I buy whole duck from the asian market (it still has a head and feet *Yuck*) and I basically offer pieces of the entire animal to my boys. The rib cage area is really soft and i can even throw that in my blender (its not a fancy one by any means) and it blends up the bones and cartilage and meat. duck is a FAVORITE in my house. I suggest you add some of the duck hearts haretoday offers; they go over really well with my boys

If it's a deep freeze(which I believe is what you are referring to), it should be good for about a year, as long as it's packaged properly with good, heavy duty freezer bags. I'd double bag them just be make sure.

Fridge should be 35-38F Fridge Freezer 0 to 5F Chest freezer -5F to -10F

I know my organ order will probably be around for at least that long, I have a ton of liver, hearts and kidney in there, just wrap it in freezer paper and bag it up really well. I had ordered the duck chunks from there along with rabbit chunks and mine like them both. I see they have rabbit organs now which they didn't when I ordered.
