Sorry for being so bad at this.
Okay well this morning he has some kangaroo/beef mince. Is it okay if I just come in and post what I fed him today, for a week?

Yes, that will be fine. Thank you. Just be sure to post what he has for each meal (i.e. breakfast and dinner).

Breakfast today: Chicken wing. I gave him the whole chicken wing, is that alright? Or should I be offering just the tips first to make sure he eats it?

The whole wing is fine. Let me know how he does, you may need to break the larger bone at the top of the wing (or you may not). Let me know how he does with it.

So far all he wants to do is stash it...

Try using a hammer or some poultry shears to cut the bones up a bit. I find it also helps to slash the skin and meat up with a sharp knife so the meat is exposed. My boys aren't huge fans of skin so they tend to eat the food better if the skin is already sliced open for them. Lazy brats...

Ok I'll do that. He's not eaten the chicken (other than the tip, yay!) so should I just cut it up and put it back or should I serve him something else for breakfast? He didn't get dinner last night because he found some stashed meat from the day before and was really enjoying finishing that up. I'm really annoyed, and embarrassed. I swear when I called that food company the lady said that the chicken was whole chicken. I emailed the company and got a response yesterday, and they said the chicken, beef and kangaroo are just the flesh, no bones or organs at all. Really disappointed and a bit upset. Hopefully I've not been hurting nibbler all this time. I'll need to find something else now. He's been getting organs, mainly heart liver and kidneys, but I thought he was getting some in the chicken too.

The heart and organs he should be okay since he has been getting those separately. Bone is a different matter though. We really need to get him eating more bone. In the meanwhile, he definitely needs some other calcium supplement. Do you have or can you get powdered eggshell and/or bone meal? Either can be added to his normal food. It can be mixed into the mince meat, and dusted over his whole meats. About 1/4 tsp per day. If his poops are still soft, you can give 1/2 tsp.
For the chicken wing, whole meat is good for 12-24 hours. It usually starts to dry out before it goes bad and they are fond of making jerky (as you noticed by his dinner snack ;D ). As long as it doesn't smell bad, it should be fine. Did you break up the bones in the wing at all? Typically when they are starting with bones they need to be broken up to begin with. A hammer often works well for this.

Dinner was a different chicken wing that was fresher that I broke up then held for him and he ate it. Breakfast today was the rest of the chicken wing from the night before. Is that ok or should I have taken it away and gave him different food? Or am I feeding him way too much in one meal if he has leftovers? (he's still interested in the leftovers though). Dinner tonight is heart.
I can make egg shell powder can't I?

Yes you can make powdered eggshell, a coffee grinder works well. Good boy on the bones! That is a good step! Re-feeding him the wing is fine, if it is spoiled he won't eat it. And no you are not feeding him too much. You are leaving breakfast out all day until dinner so he can free feed correct? There should be a little bit leftover so you know he got his fill. If there is a Lot left over then you can feed less so there isn't a bunch of waste. He should be able to eat at least Most of a chicken wing for one meal (12 hour period) though, if not the whole thing. I suspect the reason he didn't finish it was partially being unused to Abd unready for the bones. Laziness can play in and he could also have been snacking on a stash. And like humans they sometimes just have days when they aren't that hungry.
