So this may be a dumb question, but as an over protective mommy I figure it can't hurt to ask When checking that fdr has less than 5% veggies, I'm looking at crude fiber, correct?

fiber is in veg and grains, so i would think that is correct.

Maybe, although some pet food manufacturers also add juiced fruits and veggies which wouldn't add to the fiber content. Not to mention even crappy kibbles say "3% max fiber" and I know they aren't 97% meat.
I don't know if this applies to FDR (I'm assuming it would) but in kibble you can use the following calculation to determine the amount of carbs in a kibble:
Look at the guaranteed analysis of the food you've chosen. Add the percentages of protein, fat, moisture and fiber together. From the detailed nutrient analysis, find the ash content percentage and add that figure in. Take this total amount and subtract it from 100 to find the approximate carbohydrate percentage.
So add that fiber % to the carbohydrate number and it should be the total "non-meat" amount. Of course most good FDR brands will simply say what % of their food is veg.
I believe the NV Instinct rawboost bits are 95% meat, 5% veg (in their cat formula) The Orijen treats are 100% meat, but don't contain heart or bone so aren't balanced (which is why they're "treats"). Stella & Chewys is 98% meat
Not sure about other brands though.

Ooh okay gotcha.
I'm buying the Stella and Chewys for my little ones. I am going to do the frozen morsels rabbit one and the freeze dried duck duck goose.
On the fb page many have mentioned they sometimes use the dog as an add in as long as it's under 5% veggies, so I was looking into the lamb flavor.

Mine love the Stella and Chewy's duck, duck, goose and tummy ticklin turkey. They also like the Whole Life products. The downside to the dog versions is that you won't have any added taurine in them. Felines and Ferrets both need Taurine and Ferrets need a touch more than cats do.
Stella and Chewy's also makes a dry form that is nugget shaped. Mine preferred that to the frozen type.

I should specify (realizing now I didnt) the first two I mentioned were the feline versions, the lamb is the only dog one. From what I understand they began adding taurine to the dog as well..which is why I considered using it for variety. I was just concerned with how to understand how much veggie matter is in it
