Update on Cassi - Early insulinoma treatment and diet change

So, it's been about 3 weeks since the doctor found Cassi's BG to be low enough to diagnose insulinoma. Since then we have taken the pumpkin out of cassi's soupy, and are making attempts to transition her to a more balanced diet and started feeding her 3 times a day, smaller meals, instead of twice a day. She gets very low doses of pediapred also twice a day. her 2 week checkup showed a 20 point increase in her BG after a 4 hour fast. It still is not in what is considered the norm, but isn't dangerously low.
We ordered 4 different proteins from hare-today, full animal grinds, chicken, pork, goat and turkey. we never were able to successfully transition her to RMB or whole prey so she has been on a soupy for several years. While i know it isn't the best, it's still better than a kibble diet. We will make another run at it once we have her off the soupy and eating the whole animal grinds. We also tried natures variety frozen bites, she was not a fan. We also tried the Epigen 90 digestive support formula, which is the one they released that was more like the original formula before they had all the diarrhea problems. She recognized it as food, but didn't want to eat it. She just grabbed a few pieces and stashed them the way she used to with kibble. We wanted her to have something graze on during the day, and we are both teachers so right now in the summer we have the time to focus on getting her to a more diverse diet and recognizing more food sources.
She is doing very well with the slow changeover from her soupy to the grinds. we are almost to half and half. She crunches away at the small pieces of bone in the grinds, so that gives me hope for RMB in the future. My concern is the protein sources. you recommend 3, she has always had 2 in her soupy. chicken and pork. I have tried to mix the grinds to add to her soupy as i work her up to a full meal of grind. She really doesn't like the pork grind, but loves it in the soupy. So i have taken to only adding the chicken full grind for her change over. I don't like that even though I'm transitioning her to a full animal grind, i'm reducing the number of protein sources. Should i continue this way and then once i have her on a full grind diet, even if it is just chicken, begin adding in the new proteins?
Ultimately the goal is a diverse diet. but right now, i want to get her to the healthiest diet possible in the shortest time. I don't want to stress her right now. her sleep cycle is messed up with the new feedings, she taking medication etc... is it better to get her on a whole grind as soon as possible, or should i focuse on the proteins?
