Well after trying to give everyone their livers and hearts separate from there ground meat I've decided that it all needs to go together.
I have 20lb of leg quarters, beef kidney, beef hearts, turkey legs & backs and beef livers. How many lb of hearts, kidneys and livers should I grind with the chicken & turkey. I'll look today and see if I can find another protein source to go in this.

An approximation would be 3oz heart for every pound of meat, and about 2.5oz of liver and same of another organ.
