I'm a stranger to the cleaver as well. Artie and I haven't graduated to bones just yet, but I will probably use my wood chisels for it. They are insanely sharp and I can just use my hammer and the 1" or 2" blade. No splinters. Then again, they are designed for wood. Maybe I'll man-up and get a cleaver after all, when I have the spare cash.

I have a Wusthoff knife set with a meat cleaver. That thing is awesome! Germans make the best knives.
