Coconut is great in moderation, remember he will some difficulty in processing, it's a veg oil. I've heard of it to put on weight on dogs and some swear on it for creating gorgeous coat. I've never used it but I've heard that it does have benefits for our furfriends. At the moment I would be really tempted to stick to easily processed parts of his diet, stick to whole foods rather than supplements. If you want to try any of these suggestions, I would be starting only one item at a time and doing it on a trial of one or two weeks (it's said that it takes approx a month for nutrients to start to show benefits that you can see). If you start adding a little of this and/or that you won't know what's working and what's not, that's as bad as having the disease itself I would also suggest keeping a log, again it's proof not only to yourself but it's documentation for the vet if the need arises. I've discovered through the years that things have a tendency to get jumbled, we think we've been feeding this for several months and it turns out that it's only be 2 or 3, same as we remember ferrets being either younger or older than we thought. The mind plays tricks when it comes to setting data in a specific order. It's just a thought.
As far as bone amounts....that's so much up to individual dogs. Shakespeare required bone daily, organ meats required to be stretched out over a series of days....like your boy he had anal gland problems. If I didn't feed bone daily, he would have loose stools, if I missed a couple of days he had explosive poos. Now, on the other hand if I fed Mithrandir, my present dog that way, he would be so constipated you would need a land mine to dislodge the blockage . He has to have meat or tripe for 3 or 4 days, then he gets a bone meal. Each dog is an individual, it's learning about each animals specific needs that creates the issues
