I think the transition poops are still normal, it could stay seedy for a few weeks. This just means his body is getting used to having more nutrients available to absorb. A ferret should eat 5-7% of his body weight daily. (For a ferret weighing 1kg, this means 50-75g of food daily). If that amount doesn't have 35-40% protein, he needs more.
I think the grinds you chose are fine, but you'd need to feed more of it to get enough protein.
The variety is great! With the vomiting, try feeding raw meat in little bits at a time and if the poops are fine, then add more after each good poop since that means he's tolerating it well. See how much he can handle until you reach all raw. It should take a few days to a few weeks to get him on raw I think.
