Can a ferret eat a whole soft shelled crab? I was eating one myself and thought about the digestability of the exoskeleton. Not unlike eating a big bug, really.

So do you eat the whole thing? All the crabs I have experienced had hard shells.

You do! The shell is soft, pliable, leathery. It becomes merely a skin, and it’s what the crabs feel like right after they molt and before the new shell has the opportunity to harden.
