Most people feed two meals a day, just because it's easier to make sure the diet is balanced and that it's actually all getting eaten. Amount varies highly depending on age, sex, activity level, season... copied from the Raw Diet FAQ's on the HFF website: "On AVERAGE adult females will eat 1-3oz per day, and adult males will eat 2-4oz per day." Kits (ferrets which are a few months old) eat significantly more--as in, 2 or 3 times more (!).
As for raw food, you have the option of commercial raw, or frankenprey which is a simulated prey diet using cuts of meat and organs from the grocery. Or, you can use both, in which case commercial raw is considered an "alternative" meal and there is a meal plan to balance it accordingly.
Commercially available raw comes in two forms, freeze-dried (fed rehydrated with water) and frozen, either a mix (grinds) or the whole animal. There's a list here: Raw and Whole Prey Providers
The Holistic Ferret website has an explanation of how to switch to and prepare a raw diet here; I'd recommend reading thru it when you have the time as it's designed to give you everything you need to know:
