I give Zydeco Fresh raw beef, chicken. Is it OK to mix together. Can I add fresh chicken gizzards? also what about fresh veal? Also get his salmon oil.
My Thor was raw fed. I remember most but forget some combo's. He gets fresh eggs, fish, etc.

Bone in meats? What you've listed is ok to feed but there's no bone mentioned or organs ciao

Yes he gets bones. Chicken Poultry hearts. Necks. need more?

Like some of mine get diarrhea with chicken ---no matter if it is bone-in chicken. Ferret also may just eat the favorite meat and leave the other. However, I do feed 2 times a day and the second meal is a different protein(not always) from the first meal. So mine will get 2 different kind of meats by the end of the day. Other than checking for sensitivities I do not think it would hurt. But some of the others who raw-feed might have better knowledge on this. Be careful not to overdo chicken meals(sensitivities)---I noticed you mentioned gizzards. You know try to keep diet from being chicken heavy. People do feed their ferrets gizzards . I buy lamb for muscle meals sometimes---it is expensive though. When buying lamb I have found that if the meat is near expiration date---it may have a bad smell. I have punctured the plastic and took a whiff(LOL). Better than going back to the store.
