The furballs LOVE beef. It's their very favorite food. I picked up some neck bones to make bone broth today, and they were really meaty, so I wanted to give one to the kids. The bones are too large to eat, but is it safe? Not a choking hazard or anything?

Wow, you're one of the lucky ones! Beef tends to smell and taste stronger so some fuzzies take some good convincing to eat it at first, but then tend to be okay with it. Not my lot, they'll eat it, but it is most certainly their least liked protein, haha.
As for beef bones, these are too dense for ferrets and they will usually just avoid them entirely, or at best scissor the remaining meat off the bones.

Yay! Someone other than me has fur babies that love beef. It was the first thing they were willing to try. Ours LOVE beef tongue. Only thing I can serve that they don't insist I dice up.

Our two are pretty keen on beef too. Not sure I'd say it's their favourite but they do seem to enjoy it. We started them off on beef pretty early.
We also use Ox heart quite often for their heart meals. I have never had an issue handling meat, having butchered my own food on occasion (eg. Rabbit, boar/pig, duck). However, I will say right now, Ox heart stinks! It is super strong, "gamey" even. Cindy and Sally love it! Fill argue over the last piece in the bowl, like all good teenagers. Hahaha.
I guess what I'm trying to say is I haven't experienced the beef issue that many of you seem to have.
As for the neck, I don't see there being an issue feeding it. I would consider supervising the first time or two just to be sure there isn't going to be any issues. I can worry a little too much at times though, so it may not be necessary. From memory there are some smaller inner bones in the neck that might be an issue, but I honestly don't think they'll get in that far before they get bored of it.
Either way, if give it a go. At the very least it should be a little treat and a chance for a new type of enrichment.

Okay, I let them have at it and there was no issue. They didn't really get down to the bone.
Funny that I didn't realize the majority of ferret didn't care for beef. They LOVE it! Like if it's a muscle meat night and I'm giving them steak, they run as fast as they can and start eating it before it even hits the plate! They almost never eat chicken muscle meat. I stopped offering because they wouldn't touch it. Weirdos.

It's not really that they don't care for it, it just sometimes takes a bit more work than a milder meat like chicken, which is why the switching process tends to start with something like chicken first, which smells and tastes mild by comparison. But it is funny that yours have gone to opposite way of absolutely loving beef and not being fond of chicken at all, lol.
Beef being a red meat is good to have in their diet, they should always have a red meat in there. Mine still get beef, even if they won't jump for joy over it as compared to their favorites like duck or rabbit that they'd kill for.
