I'm new here and was looking at the ingredients of this food and this looks to be a good fit for our fuzzbutts. I'm wondering however if this would be a good stable diet for my 1 year old Luna on a daily basis and how much should I give her?

Your ferret needs a minimum of at least 3 different proteins, they cannot eat only the chicken. You will need to contact the company who makes this to get the ratios used in this product, eg. % of muscle, % of organs, % of hearts and % of bone. A ferret requires 10% heart, 10% organs (5% should be liver), 10-15% bone, and 65-70% muscle. Some commercial, even when it's all meat ingredients, are sometimes too unbalanced to feed, which is why I suggest contacting the company and trying to find out ahead of time.
It is also a grind so, so there are some problems you may run into: Teeth will need to be brushed several times a week, or plaque will accumulate and lead to gingivitis, then periodontal disease and finally teeth may need to be pulled. It is easier for ferrets to overeat and become fat on an easy to gobble/slurp up diet such as grinds (frankenprey and whole prey actually forces them to chew, which is great for their jaws and lets them regulate how much they eat). Getting a ferret to eat normal Frankenprey or Whole Prey later on after a diet like this for a long time can be very hard as they will prefer to hold out for this instead of trying the new food.
