My guy "Fawkes" , pun intended, is mid switch from soup to chunks of raw. I think i may have to back up a step because he wont eat the pinkie mice now. He only wants the chicken chunks. What should i do?

First off, pinky mice are not considered a meal, they can only count as a snack/treat. This is because pinky mice are baby animals and thus not completely nutritionally developed yet (eg. not sufficient in calcium).
To introduce other proteins, or ones he suddenly wants to ignore but ate before, you can chop them up a bit smaller than his current size chicken chunks and mix them together, this allows him to get the taste for it in his mouth again, while making it a bit harder for him to dig out of his meal.

I give them along with other foods.

Pinkies are great at working up to larger sizes in whole prey, and I've been known to give a full meal of them from time to time(not very often, think more "birthday"). If that is the direction you are going in- larger adult whole prey, Then try chopping the small pinkies in half and put some of the chicken "juice" on top. Move to whole, then give alone, and work up the sizes.

Would whole ground from my pet carnivore be good if i purchased a variety? Or would i need to really break it down by percentages and buy it separated?

From what I've heard, my pet carnivore is a really good source for whole animal grinds.
