I've been sitting here staring at the screen for like the last 5 minutes trying to decide on the best way to reply to all you just said. I have decided I am just going to be honest and blunt, no sugar coating.
First and foremost everything LindaM said is correct.
Your ferrets are eating an unbalanced diet and it may take time for them to show symptoms of suffering from that but they are suffering from it whether they exhibit the symptoms outwardly or not. Your breeder friend is not a good source of diet information for you if he thinks it is ok for them to mainly eat chicks.
Gizmo is not going to starve to death or suffer from a lack of daily chicks. He may lose weight but some ferrets are just built sleeker and leaner than others. One chick per ferret per week is all you should be feeding, this chick meals does not fly.
From what you have posted here I am surprised that is was only 3 answers you had to look up, I would have thought it to be 3 answers that you knew, possibly 4 even if you do not seem to follow it. If your ferrets will not eat heart or organs at all I would have to say you gave up too soon with your efforts. It is your patience and persistence with them that makes a successful switch. That persistence applies to continuing to request help when you hit a road block such as that one, not just trying the same thing over and over and having it fail for you.
Last but not least, I'm sorry that you felt it was taking too long for a mentor to become available for you but even though we love our ferrets and computers we do all have lives outside of them. I'm happy to share my personal situation with you. I'm a wife, mother of 2, a full time nurse, a caregiver for my disabled mother, have 7 ferrets (one of which has very unstable blood sugar despite all of our best efforts) and I run an art business (or am at least trying to) on top of doing my best to make time daily for my switches. Again this leads back to the requirement of you patience and persistence.
Having said all of that I want you to know I am still very happy and willing to work with you to improve your ferrets diets.
