My baby girl spaz has a little irritation in her throat, she keeps coughing and licking her lips. I was told to give her pure pinking to help ease it out of her...But she won't eat it. Any suggestions?

Hmm, I've only heard of using pumpkin for the Blockage Protocol, or if you are dealing with some severe cases of diarrhea. If you think the irritation could be from a stuck hair, which sometimes happens, and especially during shedding season, you can give her a weekly raw egg to help with that in future. During the shedding season we double the amount given. Have you tried giving her a raw egg/egg yolk to see if it helps with the irritation? Even using a little salmon oil could help if it's from a hair.
As for getting her used to pumpkin, since it's a good idea just in case you ever need to do the Blockage Protocol: You can add tiny bit water to the pumpkin to make it a little bit less thick. You can warm the pumpkin up a little. You can add either a drizzle of salmon oil or if she eats raw egg, a drizzle of that in with the pumpkin. You can also go the route of dabbing against her gums to get her to taste it.
Just be aware that pumpkin being a fruit, should not be a casual addition to their diet, it is meant to be used only in specific situations.
As for her coughing, you are sure it's just an irritation, right? Not a possible upper respiratory infection or the like? Is she coughing a lot? Does she have any wet/runny eyes or nose?
