Our ferret is eating the soupie and will likely be ready for the next step soon, but how does one keep the balance of muscle meat, organs, etc when starting to add meat bits to the soup? It seems like adding bits of meat to the soup would throw off the balance, right? Thanks a lot to anyone with answers.

It takes a few months for dietary imbalances to start having an adverse effect on a ferret. So you have that time for the transition with no real concerns Good example is a sickie can be on strictly meat only baby food for up to about 4 months before they suffer for it.
