I recently tried getting my two fuzzbutts to taste a chicken wingette, but there was no success. But I read on a couple different posts here that I should remove kibble a few hours prior to doing so? Do I understand that right or did I misunderstand?
When I did it yesterday (or day before, I can't remember) I'd completely forgotten about the kibble, and it was a spur-of-the-moment 'why not?' type of decision. They (predictably) threw a fit the entire time. Should I try again after a few hours without kibble? How long should it be removed before attempting the wingette?

I think it is just 2 hours. You can cut the wing at joints to make it more manageable.

Yes, you remove one type of food (Kibble or Raw) a minimum of 2 hours and a max of 3-4 hours prior to introducing a new type of food or the original food the ferret is used to. This is to ensure that the ferret doesn't get any stomach upsets from the sudden change in food. Kibble especially should never be "mixed" with raw or any moist foods - once kibble becomes moist, It increases the growth rate of bacteria which can also contribute to things such as stomach upsets or bacterial overloads in the gut of a ferret. Accidents happen, so don't stress if you accidentally fed one thing too close to the other. If the ferret can eat the wing as it is, then feed it as it is since there would be no need for chopping up the wing in that case. If you find that you would prefer to chop it up, that is also fine. Here is an example using a duck wing (this also applies for any type of wing.)
