So, while I wait for a mentor, I'm going to trial a few things on fuzzy and update what he likes/dislikes. So far, we have:
Chicken wing tip: offered: two. ate two, bones and all. Guinea Fowl Humerus. Offered: one. Nibbled then stashed. left in cage, not touched. Chicken Liver: offered one in chunks. Left in cage over night mixed with dry food. gone by morning. cooked chicken. Whole poussin over three days. Just the meat. Eggs: beaten raw. Slurped up no problem.
I will update when I've trialed other things.
Also, suggestions are welcome.

I have bought and portioned the following: beef heart: 50g portions pork liver 25g portions lamb kidney: 70g portions lamb mince: 50g portions
I also have chicken thighs and wings what is usual portions for people to use?

I believe it's recommended for each individual meal to be roughly the same amount by weight so you can accurately track their appetites and nutritionally balance the diet.

Frankenprey model If your ferret eats 28 grams for each meal ---just arbitrary grams for example colored blue are the two meals you will do differently but will add up to 28 grams Sun AM: organ meal ( ½ liver, ½ other organ) 14 grams of liver and 14 grams of kidney to make the 28 grams
Sun PM: edible bone-in meat Mon AM: edible bone-in meat (or muscle) Mon PM: edible bone-in meat Tues AM: heart Tues PM: edible bone-in meat Wed AM: muscle meat Wed PM: edible bone-in meat Thur AM: 1/2 heart meal and 1/2 organ meal to make 28 ounces (14 grams of heart and 7 grams of liver and 7 grams of kidney)

The best/easiest way to find out how much Monty eats is to weigh out his food before you feed it, then see how much is left over when you go to feed the next meal. For example, my big boy Ziggy gets fed 2 oz (about 55g) twice daily, although there is usually a bit left over by the next meal. Maybe start at 50-60g twice daily. If there is a lot left over, try increasing his meal sizes by 10g. If it's completely gone by the next meal, try lowering it by 10g. The ideal balance is that there is a little bit left over by the next meal (so he is eating his fill and leaving a little), but not so much that you are wasting a bunch of meat. You can either write it down in a log/journal or chart it in Excel. As posted above, the frankenprey model is important to follow to ensure your Monty is getting a balanced diet and all the nutrition he needs. Here is our official page on the diet which lists examples of muscle meat, bone-in meal, organs, etc. and also discusses the importance of variety. It is absolutely fantastic that Monty is already eating chunks of meat and bone-in meat!

he was a stray. we think he survived by being fed leftover meat and maybe hunting. he doesn't mind crunching down on bone at all, he enjoyed the treat.

That definitely explains it! Ziggy was the same way - although he wasn't a stray, he was kept in a greenhouse outside and fed whatever grocery store kibble was on sale so he never really imprinted on food. He was much easier to switch to raw than my two fussy little girls Once you are sure he will eat the various meats pretty well on his own and have a solid plan for a raw diet menu you can ditch the kibble altogether and just feed raw. I usually portion my meals a week (or more) at a time so that I know they are getting the right amounts of muscle, bone-in meat, liver, heart and organs.
