you could try again to chop large furry mice and mix it with some other grind until they start to eat.
rabbit organs (just tried this and they like it a lot) (rarely used as I only have about a pound more)

-chicken drumstick (hard to get them to eat it on their own)
-sheep grind (rarely)
do they eat chicken wings? they are not included in your last menu... you could smash those bones so they can chew on them easier. grinds are easy to eat and between the grinds and bones almost every ferret will choose grinds bc they don't have to work for their meal
