I think it's all meats. Let me find the post and I'll link and quote you to it. Two secs. Gah! Of course when I want to find it I can't. Basically meat goes through a few stages at each stage a ferret will decide whether or not to eat it. I can't remember all the stages so I won't try to tell you. Hopefully someone can come and tell you what they are. It's pretty simple. I only let them stash for a few days then I clean it up. Also, I move all stashed pieces to their cage at night so they have a midnight snack. Mine are half free roam I would say. They are free roam all the time except when we go to bed and only because we have big dogs who sleep with us. Found it.

Thank goodness, I found it. I think this is part of what the mentors use when first starting a switch. It explains the stages meat goes through. @poncesmom I found this on one of your switching threads and I hope you don't mind me using it to explain something.

I don't mind a bit. I often borrow from other Mentors. Mentors sometimes find just the perfect way to explain something and if it helps a Mentee, I happily use it also.

I found quail at the Asian market I usually go to! I had no idea quails were so tiny. Given how small their eggs are, I suppose I should have guessed that. Anyhow, my goodness, are these things so expensive. I paid $12.50 for this pack of 6. If I alternate with chicken wings, it wouldn't be so bad though.

Mitch continues to be difficult. He doesn't want soupie, he doesn't want organ soup, he doesn't want Mypetcarnivore duck, HE DOESN'T WANT ANYTHING! He finally ate some FDR, and he looked like a starving ferret who hadn't eaten all day. You know why? BECAUSE HE HADN'T EATEN ALL DAY!! *sigh* This boy is causing such a grief. Anyway, I locked him up in his cage and I put 2.0 oz of FDR on a plate (as @poncesmom suggested). He finally ate some of that, and stashed the rest.
Leela AM; 0.7 oz FDR (TTT) + soupie mix -she doesn't like soupie by it self, so I have to mix some FDR in to mask whatever she doesn't like about it. Day: probably some kibble PM: 1.0 oz FDR (DDG)
Flexie AM:- Day: kibble PM: a spoon full of FDR -this is the most FDR she's ever eaten!
Mitch AM: 0.3 FDR + soupie - I force-fed him. He ran away. PM: approximately 1.5 oz of FDR, rest is stashed in his bed for night time snack. -Activity level is great considering how little he ate. He had a 30 minutes of water therapy session , and wrestled with Mango afterward. Poo is good consistency too.
Mango AM: Chicken wing PM: 2 oz. chicken liver + pork kidney -I tried to give him beef liver first, but I'm starting to get the hint. He doesn't like it. This is the second time I offered beef liver, but he doesn't want to have anything to do with it. I switched to chicken, and he ate it no problem.

He's so cute! He has that pretty European face.
Beef liver is such a strong flavor. I tend to stick to chicken or pork liver, for that very reason.

He is a stinker, but he gets away with things because he is cute. Is it necessary to rotate organs and hearts? For example, currently I use 1/2 chicken livers and 1/2 pork kidney for organ meals. To give a variety, should I use other organs instead of that combination every time? Similar question for hearts. Should I use chicken hearts and pork hearts both?

I have found with mine, that they eat better if I use the same organs.
Chicken/duck/pork heart: remember Heart is a muscle meat.
Chicken liver or pork liver, pork spleen, pork kidney and pork brains. I haven't found thymus or pancreas anywhere. They aren't crazy about beef either, so while I have tried beef heart and beef liver, it didn't go over well.
So, I do stick to the same basic organs and get more protein variety on the Bone In and Muscle meats.
The more variety the better, but this works for my five.

Another difficult day for Mitch. How long can he stay healthy eating so little? Would he starve himself? Maybe I should give him some junk food (Ziwipeak lamb) at night, so I know he's eating SOMETHING! By doing that, I feel like I'm giving in. But I also don't want to kill my ferret either.
Leela AM: 1.0 oz. FDR + MPC duck Day: PM:kibble?
Flexie AM: taste of FDR Day: kibble PM: taste of FDR
Mitch AM: He didn't want anything I offered. But I saw him eating some stashed and dried chicken wing. I'm not sure how much he ate. PM: still refusing to eat.
Mango AM: CGH (His first time eating CGH. He ate it no problem!) PM: 2 oz. chicken gizzards
I also changed my basic menu after @julesalot's suggestion. I replaced two bone-in meals with muscle.
Mango's revised weekly menu
Sun AM: Edible bone-in meat Sun PM: muscle meat
Mon AM: Edible bone-in meat Mon PM: ½ Hearts + (½ liver, ½ other organ)
Tue AM: Edible bone-in meat Tue PM: Muscle meat
Wed AM: Edible bone-in meat Wed PM: muscle meat
Thur AM: Edible bone-in meat Thur PM: Hearts
Fri AM: Edible bone-in meat Fri PM: (½ liver, ½ other organ)
Sat AM: Edible bone-in meat Sat PM: Muscle meat
7- Edible bone-in meat 1.5 - Hearts 4- Muscle meat 1.5- organ -------------------------------- = 14 meals

He usually likes soup, and any Mypetcarnivore gound meat. He grew up on it. I took his kibble away competely about six weeks ago, and he was fine at first. He ate bone-in meat such as chicken wings and chicken neck, and some pureed organas well (chicken liver and pork kidney). The last few days, all of a sudden he started being difficult. He doesn't eat the stuff he used to eat. I'm not sure why. I'm leaving 1.0 oz of Ziwipeak lamb in his bowl tonight. I'll weigh the rest in the morning and see if he would eat some of that. (He usually goes nuts over these. We'll see what happens in the morning.) I'm getting dangerously low on FDR. Stella & Chewy's FDR is out on many website. I'm starting to think there's something going on. That's another food that Mitch would eat, so I don't want to run out. I just ordered chicken version of that, which he has not had before, but that was all I could find online. *Sigh*

Suddenly stopping eating is not a good thing, I think a Vet visit is in order. He could have an upset tummy or other issues going on, many things cause decreased appetite. How is his energy? What are his poops like? He could have ulcers, that would be a simple solution, treatment is usually Carafate. Going one or two days without eating much isn't a big deal, but more than that and something is going on, he's trying to tell you something.
