I had to cut up the chicken from his first meal and he still didn't eat most of it. I ended up not doing the chicken wing thing last night as I started feeling sick right before bedtime

I only gave him small pieces if the wing but he ate all of that and he is eating his chunks if chicken fine.

Great! Just continue increasing the size of your chunks! Also, if he ate all the liver you offered last time, I'm thinking he might have no problem eating it alone (rather than in soup form) and twice a week you can give him half a meal of liver mixed in with the chicken pieces.

I tried to give him liver again with his chicken last night and it looks like he just ignored it I am going to try half soup half liver for his meal tonight.

Good, keep feeding him that once a week until he eats it all on his own. Since they only need half a meal of liver a week, you can keep it at 1/2 liver 1/2 soup until you find somewhere to get a secondary organ.
What size chunks is he at now? A pic would be helpful, but you can just describe it if you'd prefer.

When should we start introducing another meat into the mix?

Sorry, I was gone all weekend. You can introduce another meat whenever you're ready. I recommend one of the following: pork, quail, pheasant, turkey, or beef. Pork usually takes the easiest after chicken, but quail is an excellent bone-in to try after chicken if you can find it. The process will go the same way as any other process in the switch. Start out with slivers (or soup if you need to), and slowly increase the size as you notice him accepting what he's currently getting. Then you can continue to add new proteins as you feel comfortable.

I was wondering if you thought this would be an ok vet to take Mister for a check up or if he got sick? brooklineanimalhospital.com/It is close to me only 15 minutes and they say they take ferrets and one of the vets has been a small animal vet for 15 years. They also sent a 50% off coupon for the first visit so that would help convince my husband to let me take him for a check up he hasn't had one since the old owners got him and he was born in December 2012.

That sounds like it should be fine. It also looks like they accept Care Credit and pet insurances, so that would be a good idea to look into. Care credit has helped a lot of people in emergency situations, but you need to sign up for these things before your pet gets ill or they might not accept you. I definitely recommend taking Mister to the vet now, before he gets sick, so you can get a general feel for how they run their office and how well they know ferrets. A check up is a good time to ask as many questions as you want about the vet themselves, see how they feel about raw (don't let them discourage you if they are against it), ask questions about pricing for standard procedures, etc. If you don't feel comfortable with them after the check up, there's a vet on our ferret vet directory that is in Amherst if the drive wouldn't be too far for you (not entirely sure where it is in comparison to your location). That place is also close to me. Anything I should watch for that means I should take him to the vet asap? I am worried something is going to happen and I won't know to take him to the vet and I will lose him. He is eating his chicken chunks fine I think he is eating enough since he sometimes leaves a piece. I plan on introducing pork soon.

He's a bit young for most of the serious stuff, but make sure you look out for constipation. Along the same line, if you ever see him eat ANYTHING other than meat, you need to either take him to the vet or go through our blockage protocol, which should only be used in blockage emergencies. It requires feeding 1/4 tsp of Vaseline and pure pumpkin every hour until you see a nasty poop with said object in it.
A few more things to watch for is lethargia, hind end weakness, and off poops (and by off poops, I mean green, explosive diarrhea poops). All of these should get medical attention asap.

Mister 2lb 10oz(this is the most accurate weight I have got on him I was guessing since he moved around so much the other two times this time I gave him his liverchicken soup while weighing him so I got him to stand still on it) 5-6 chicken chunks twice a day Poop the same as it has been Activity normal maybe a little more tired Monday-Friday morning 5-6 chunks of chicken thigh twice a day Friday night 1 oz chicken thigh and 1 oz chicken liver soup
He started eating the liver chicken soup right away and he really likes it should I try to give him more liver and less chicken next week?
