Looks okay. But just so you are aware- if mine are given something other than bone for a meal, they'll totally ignore the bone and eat the easier meat ;D Ferrets are very lazy eaters given a choice. Since you've got 6 meals to fill in(not S & C), why not do 2 straight chicken wing, 1 heart, 1 organ(and whatever muscle to fill the meal out), and 2 muscle meat(pork and beef). If they are getting chicken with the wing you won't need to worry about it as a muscle meat.

He eats it all lol, he's a pig. However he will only eat the wing tip, not any other piece, no matter if I feed it alone or not. Maybe that will come with time?

I'm not exactly after the title but I would like to confirm our menu is solid. 3 ferrets, two boys and a girl. Each meal is normally between 5-6oz sometimes with leftovers and sometimes not. We normally buy a whole chicken and they eat it in a bit over a week the breast is saved for organ soup.
Mon am - chicken (wing, ribs, back, neck) pm - chicken hearts
Tues (all day) quail (2).
Wed am - Calv/beef liver (5oz) w 2oz chicken breast and some water into soup. pm - chicken (wing, ribs, back, neck)
Thurs am - pork spleen (which they seem to be getting tired of) 5oz w 2oz chicken breast and water into soup. pm - chicken (wing, ribs, back, neck) something to that nature
Fri am - chicken (wing, ribs, back, neck) pm - chicken or beef hearts.
Sat am - Cornish game hen pm - pork (usually butt roast)
Sun am - Cornish game hen pm - pork (usually butt roast)
Sometimes they will eat a whole cornish game hen from Saturday through Sunday if I'm feeling too lazy to cut it up and separate it to freeze.
They do get beef on occasion but with it being more expensive than chicken/hen/quail/pork its more often a treat than a staple of their diet. They do love it though! Cost has a lot to do with the two heart meals each week as well.

Mon, Wed, and Fri he gets fish oil with his breakfast. He eats 4 oz a day currently, 1/4 patty of S&C in the AM which is about 2 oz. Then 2 oz at night, 1 oz of each item. Unless its a bone in meal, then he just gets a big chunk of whatever bone in item he is eating that night. He is also getting Laxatone 1x-2x a week. He eats all organs with gusto and eats bone in meals just fine too.

Plus the liver and kidney in the commercial. Earlier in this thread you had said an ounce of liver and an ounce of kidney a week. I just looked and the commercial I'm feeding him now has no kidney in it, but has liver.

Okay The dietary requirements(on average) are approx. 2ozs each of liver and another organ each per ferret per week. This menu sounds pretty good The reason I mentioned one ounce was because they are getting commercial raw on a daily basis once a day, which would necessitate a half portion of organ meat throughout the other 7 meals.

Should I stop feeding the chicken liver since he gets liver everyday in his commercial and replace the chicken liver with kidney? I don't want to be giving him too much liver and not enough other organ. However some of the flavors of the stella and chewy have liver and spleen in them. So when I switch to those flavors should I not give any organs? Sorry for the questions, but that part of it has got me stumped.

No Just average out for the other 7 meals that are normal meat. Since she gets commercial raw for 7 out of 14 meals, she's getting half her weekly requirement. So instead of two ounces each of liver/kidney, she'd need one ounce of each
