I feel like she might be over eating ? Right when I put they're food in she's right at it

I'm sorry for the late response, things have been a little hectic over here with some deadlines I had to meet.
Please take a photo to show me how big the chunks that you give them are. It could be that she's eating too fast, but it could also be that your size is a little off and she thinks she can just swallow it, meanwhile it's just a bit too big for that to happen without issue.
No issues with her poops? Does she grind her teeth?
Pawing at the mouth can indicate nausea or stomach pain. May I ask on which protein she's been doing this? Turkey or Chicken, or both? An ulcer or blockage is also a concern in which ferrets may paw at their mouth.

I'll take a picture of they're chunks when I get home. Her poops have been fine as far as I can tell. It was a mix of Turkey and chicken bone in. And doesn't grind her teeth. But the only time when she pawed at the mouth was when she was gagging But this was the first time she's done anything like this.

Plus most of they're poops without the bone in meal arr just a liquid pile. And it still smells pretty bad, I can hardly stand it when I clean the cage. The only difference I've seen Is less pooping

It kinda concerns me that their poop is THAT runny on a muscle meal, it shouldn't be. Other than Winnie, when did the other two have their most recent vet check? Here's the Poop Chart: docs.google.com/document/d/16e-Ir6cjH9Kstg96axaEdoER9nWc9W5riVmD39m-zhkIt shows an example of what a muscle meal poop generally looks like in consistency, and same for organ meal ones. The organs and heart meals produce a much wetter, quite loose poop than the muscle one, which is wet but still has some form to it.

Kanga went feburary 5th for bird seed poop but it was from food Roo went February 12th just for a check up

What has the protein been for the muscle meals that had the runny poops? Have the muscle meals been followed by bone-in meals?
And please get me that picture of the bone-in chunk sizes tonight.

For things like turkey neck, the easiest way to cut is to cut in-between the vertebrae.

And how do cut in between the vertebrae?

If you buy only the wingette pieces, then you will end up giving them as is really, because it's already a third of the entire wing (which you'd normally cut into 3 sections). I'd offer it as-is and see how they do, if they are still a bit intimated by that side, then only cut it in half. Have you seen the bones of a turkey neck? Feel with your fingers for where the bones connect and wedge the knife in there to push them apart a little and you can use a cleaver to cut through where those weak points are. It'll end up looking like this photo when chopped up.

And also again they're poop smells really bad. I can hardly leave my door open without it smelling the house up. I thought by now they smell wouldn't be that bad still.

They only ate 2 oz of they're liver and thymus last night between both of them for some reason. They normally eat almost 6 oz

How are they eating this morning? Still meh, or back to normal? Any noticeable change in their energy levels?
As for the poops, you are very likely still going through detox poops, generally it's 4-6wks of them, but there have been cases where it has taken longer for those to be completely finished. And yes, they do smell absolutely awful.
As for the vomiting with Kanga, we should continue to increase the sizes of chunks as I has suggested above, that way we can be sure she isn't eating too fast or trying to swallow some pieces whole without really chewing them up first.
