Okay, update and a menu.
I've made a menu for this week. It's still very chicken heavy, but it's gradually getting better. I've pretty much added enough different muscle meats, I just need more bone in. I haven't seen my neighbor who was looking into duck for me, so hopefully that works out. The butcher never rang me back, so I'll go in there soon and ask again about quail. If I can get those two things, I'll be set I think. So far we're at chicken, turkey, beef, pork and kangaroo, so that's 5 proteins! I was also thinking of grabbing them a little fish sometime soon to try. Even if some things don't stay in my menu every single week (like fish), I'm really keen to get as much variety as possible, while they're still pretty receptive to trying new things.
The kangaroo went well. I've been finding that at most meals I can give about 4oz and they will leave somewhere around 1oz. Sometimes a little more, sometimes less. I'll leave 5oz of hearts tomorrow because they're really popular. They had 4oz(120g) of turkey/chicken mix and I had about 23g left, which is pretty much on par with their usual habits with non new foods, so I'd say we're a success so far and I'll be moving on to a half and half mix. They also had raw egg mixed around in that to encourage them which really helps.They LOVE raw egg.
Poops - getting a lot more normal. Firstly I'm still amazed how much less of them there was almost straight away. There was so much more on the kibble. I think their poops are still a bit transition like, but getting better. I'm starting to see less of the gross ones and more normal looking. The organ poops are of course black and disgusting.
I think that's all. I haven't weighed them recently, but I'll do that soon. Let me know if there's anything I missed.

am: (heart and organs) 1/2 chicken heart, 1/4 chicken liver, 1/4 lamb kidney
pm: (bone in) Turkey wing
Saturday:
am: (muscle meat) Beef mince + half an egg with some shell
pm: (bone in) chicken wing
Sunday:
am: (Organ meal) 1/2 chicken liver, 1/4 lamb kidney, 1/4 lamb brain
