Sounds like everything is going super!
Ferrets sometimes eat alot during the start of a transition and gradually slow down as they adjust.
With tripe, you want to avoid white tripe since this is the one that has all of the nutrients bleached out of it. Green tripe is a better option, it is high in nutrients but has a horrid odour that turns ferrets off it a majority of the time. However this doesn't mean you don't have to try it. (Good luck with it!) I've heard Heather talk about tripe from time to time.
Testicles make for a good secondary organ meal! They are gross, but hey, all organs are, but this is good. If you get the chance for any organs like this, grab them for sure! The only issue would be the availability. Getting Testicles as a secondary organ may not be always an available thing for you, so finding a good source for a secondary organ that is not liver is something that should be looked into when you get the time. If you can also find a third organ type, this would give more variety to the diet. It tends to be tough and hard at first when you need to find sources but don't worry. Take your time and do some research or ask around here and there. You'll find the sources. If you can order online, you may also have more options available. (Hare-Today, My Pet Carnivore, if they're available to you and/or in price range for you.)

One last thing, I would be very cautious with using soap.
Soap tends to strip the oils and dries out the skin, and this can cause more odour and/or dry-itchy skin. Cleaning ferrets by bathing them isn't entirely necessary, but if you find you need to, I recommend using a pet conditioner rather than a soap or pet shampoo. It should be more easier on the skin and fur. You may also need to keep an eye on ingredients in products, some will contain Essential Oils, which can be toxic to ferrets.
