As far as the nipping and drawing blood goes... they were probably mishandled and not socialized at the pet store and without meaning to you made it worse by scruffing them. Hands are for loving and scruffing should only be used for medical stuff. With my biters I always had to pick them up slowly, pet them slowly for like a second and put them back down. They eventually learned I was a source of only good things, I was someone who could be trusted, and they came around. It takes work. I had one who wouldn't even let me go into her cage to get her food bowl. She drew blood. But she was hit in the face as a baby. I baby gated her into the bathroom and worked with her. Being caged made her feel cornered. With her she had to observe me first and the first few days there was no physical contact with her. Once she knew she was safe she approached me and we slowly built a bond. She is now a happy, non biting adult.

Also think of an 18 month old baby having a temper tantrum. You don't as a rule punish them by doing anything other than ignoring them. Same thing with baby ferrets
