Yeah, it's hard to have variety when they won't eat most of the foods. Now you are up to at least 2 meats. If you can get him to eat one more then you are at least getting in the minimum of 3 kinds. 50/50 is good with the beef and turkey. You mentioned trying pork. I find my ferret seems to lean towards hoofed animals and turns up his nose to fowl

Finally caught ground pork in the grocery store yesterday and mixed up a batch with it, we’ll see how he likes it. He has gained weight on the increased food easily, but not in the right places- now his belly is bigger but his spine and ribs are still noticeable. This is unfortunately a typical body type for ferrets to adopt with adrenal, and the prednisolone encourages adipose fat storage as well in humans, so no reason for it not to in ferrets I guess. Went back down a few days ago to a maintaining diet of 2.5 oz a day, we’ll see if he keeps his current increased and improved weight on that.

I've seen ground pork fairly regularly, but no one ever liked it or beef. I'm down to 3 ferrets that are passing on ground turkey lately, though they've bee getting it from the same source their whole lives with us.

That sucks, Uncle Joe. I’ve had so many foods get caught up in the picky radar that he used to eat fine, enjoy even. Pork was a success here! Tried 50 pork/50 beef last night and he took it without suspicion, and 100% tonight and he took it no problem.
