Are gizzards a suitable second organ to feed him?

No, gizzard is a muscle meat. Kidney is the most commonly available second organ where I live, but it varies from place to place.

The butcher shop nearby is out of kidney, but they do have "beef sweetbread" which they said is a gland. They have brain too, but that's a muscle I think. Does anyone know what "sweetbread" is?

A thymus gland and/or pancreas. I'm pretty sure the brain is considered an organ.

Pancreas is a good option I believe, and I heard about someone giving pig brains to ferrets as an organ meal, but I don't know enough to say for sure.

Success! I think. He's been eating large chunks of uncut chicken thigh was long as I sprinkle kibble powder on it. Today, I gave him some without the powder and he licked it for a while and chewed off a small piece and went to sleep. I'll check in the morning to see if he eats it in earnest, but it's a good sign I believe.
UPDATE: He ate all the chicken! Now just the challenge of getting him to eat organ meat.
